When I need something quick and nutritious to whip up, I make this healthy toddler soup recipe that’s good for the whole family.

Plus you can make this soup with your pantry staples. This soup is very adaptable and subbing items in this soup to use what you have works well. I always just use up what I have to make this soup.

Since we’re staying in with our family since the recent outbreak of COVID-19 and have stocked up on pantry staples I figured it’s the perfect time to make this soup. It also freezes well so you can make large batches and have a meal another day!

This is such an easy meal to make and great for everyone in the family – from babies to adults!

This soup is good to make if you are low on time or energy.

It’s also very nutritious, healthy, and has no sugar.

I buy a lot of frozen vegetables. I can usually get them cheaper than fresh. Plus, they won’t go bad if I don’t use them right away. And, they are usually pre-chopped and rinsed- so way less prep!

Canned Vegetables also work well for this soup.

I can’t find any canned items right now in the grocery stores where I live – so use what you have access to.

Healthy Toddler Soup Recipe (3)

This toddler healthy soup recipe is so easy and fast to make. There is little prep – especially if you are using frozen vegetables that are already chopped up- but even using fresh vegetables it doesn’t take that long.

Cook Time: 15 minutes

Total Time: 25 minutes

Ingredients

  • 1 can of diced tomatoes or tomato sauce.
    • other options – stewed tomatoes, whole tomatoes sliced up, or another variety of canned tomatoes.
  • 1 32 oz carton of chicken broth
    • other options – beef broth or vegetable broth. If you don’t have any broth you can add water and add seasoning to it
  • Salt and Pepper to taste (omit salt if making for babies)
  • 1/4 teaspoon of Italian Seasoning – more or less to preferred taste
  • 2 cups of vegetables (diced)
    • Veggie ideas: corn, green beans, sweet potato, butternut squash, peas, and zucchini (but use what you have!)
    • I usually add 2-3 different vegetables into this soup. More or less, depending on what I have. Add vegetables that you have on hand that your toddler likes! Canned or frozen work well.
  • 2 tablespoons lentils (I used green, but any variety works well)
  • 2 tablespoons quinoa (I used red, but any variety works well)
    • if you don’t have lentils or quinoa you can add pasta or other cooked grains such as rice, orzo, couscous (cook first then add to soup)
  • 1 Can of beans (any variety)
  • Add water to make soupier or leave thicker if you prefer
  • Parmesan cheese or shredded cheese for topping afterwards (important for my toddlers-they devour the soup this way, and so do I!)

Instructions

  • Turn stove on med-high (I use back burner just so my toddlers won’t get burned if they reach up)
  • Add in 1 carton of broth
  • Add in 1 can diced tomatoes (or tomato sauce)
  • Add in salt, pepper, and Italian seasoning
  • Bring to boil
  • Add in 2 tablespoons quinoa and 2 tablespoons lentils
  • Bring back to boil
  • Add in all vegetables you are using (dice up vegetables small if they aren’t already)
  • Let cook for 10-15 minutes- simmer on low-med with a lid on the pot (until lentils, quinoa, and vegetables are cooked and soft)
  • Stir in canned beans
  • Before serving, let cool and add Parmesan cheese and shredded cheese on top
  • Enjoy!
  • Double recipe for larger families and leftovers.

This soup also freezes really well if you make a double batch and have leftovers. Put the cooled off extras in zip lock bags and lay them flat in the freezer. I do one serving per zip lock bag- that way it’s easy to thaw and you only thaw what you need.

You can also puree this for baby food with a blender (I did when my twins were around 9 months) and freeze into cubes with a tray like this. If making for baby food I rinse all canned items well and omit salt.
