What are Linzer cookies?

Linzer cookies, which originated in Austria, are classically sandwich cookies made with pastry dough and filled with jam. In Morocco my grandmother called them “heuvos fritos” or “fried eggs” because when they were filled with apricot jam they look like fried eggs!

I was playing around with my kids and this dough and they asked to put nutella on them, that’s when I had the idea to make this nutella Linzer cookie recipe.

What ingredients do you need for this Nutella Linzer Cookie recipe?

For the pastry dough:

  • Vegetable oil, I use canola
  • Sugar
  • Eggs
  • Vanilla
  • Flour, I use all purpose
  • Baking powder
  • Salt
  • Chocolate sprinkles

For the filling:

  • Nutella or your preferred chocolate spread

How do you make Nutella sandwich cookies?

This linzer cookie recipe is very easy to make! Just follow these simple steps:

  1. First, you’ll prepare the dough by whisking the wet ingredients together.
  2. Then you add in the dry ingredients, mixing until a dough forms.
  3. If the dough is too sticky to roll, refrigerate for about 30 minutes.
  4. Roll out the dough in between two pieces of parchment paper.
  5. Now the fun part! Using a cookie cutter cut out your favorite shapes. In half the cookies cut out the center using a small cookie cutter.
  6. Bake the cookies and let them cool completely.
  7. Then you’ll assemble the sandwich cookies: spread nutella on the flat side of the full cookies and top with the cookies with the “window”.
  8. Now, the real fun part 😉 eat them up!!

Can you make these cookies in advance?

Yes! You can bake the cookies up to three months in advance. Freeze the cookies without the filling in an airtight bag or container. Defrost cookies before assembling, for best results.

Ingredients

  • ½ cup canola oil
  • ¾ cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2-2 ¼ cups flour
  • ½ Tablespoon baking powder
  • ¼ teaspoon salt
  • cup chocolate sprinkles

Filling

  • ½ cup nutella or other chocolate spread

Instructions

  • Pre-heat oven to 350°F/180°C.

  • In a large bowl whisk ½ cup of oil with ¾ cup sugar. Add 2 eggs and 1 tsp vanilla and whisk until fluffy.

  • Add in 2 cups of flour, ½ Tblsp of baking powder and ¼ tsp of salt. Mix with a wooden spoon until dough forms. If the dough is sticky add up to ¼ cup of flour.

  • Pour in chocolate sprinkles and knead until they are evenly distributed throughout the dough.

  • If it’s still a bit sticky, cover and place in the refrigerator for about 20-30 minutes. It’s ok to skip this step if the dough is rollable.

  • In between 2 pieces of baking paper roll out the dough to about ¼-⅓ inch thick.

  • Cut out desired shapes (I used stars and hearts) with cookie cutters.

  • In half the cookies cut out a small shape in the center.

  • Bake cookies on a parchment lined cookie sheet for 8-10 minutes until edges start to brown.

  • Transfer to a cooling rack and let cool completely.

  • When cookies are cool, spread nutella on the flat side of each complete cookie and top with a cookie with the center cut out, flat side down.

Notes

Store cookies in an airtight container on the counter for up to 3 days.
If you want to make these in advance bake the cookies and freeze without filling for up to 3 months. Defrost and assemble before serving.
